Cooking Classes & Kids: Why We Love Them Both

Holla folks!

I just wanted to write a quick note to let you all know what’s been happening around here of late, as it has been (just a little) busy juggling work & family & blogging & Not So Fast all at once, and it is all so worth it.

As we gear up for another holiday season, there are so many things that can take up our time & precious mental space.

Of course, there are the basic things: family needs, school matters, home meals, laundry. There is vacuuming to do (thankfully my wonderful husband does that), and Christmas decorations to hang. I am loving Instagram these days as people share photos of their Christmas trees and (my fave) their favorite childhood decorations.

As  you all know we only get one chance at childhood, and I personally will never forget that (rather sad) day when I realized it was all over (my childhood, and yes it happened just like that), and that all that time I spent in my youth wishing I was ‘grown up’ could have been better spent being the age that I was. Young.

This is partly why I am so passionate about working with youth.

As I prepare to bring out my own childhood decorations (we just got the tree last night), I am reminded that each of us gets a chance everyday to create our own special memories, or if you are a parent or a mentor or teacher to children in any way, we get the chance to create memories for our children, either good or bad.

Kids do what we do, and kids learn directly from what we (as a collective) teach them.

Not So Fast Cooking Classes

Tonight me and our faithful group of NSF volunteers prepare to meet out third group of kids at a community center in Vancouver’s poorest neighborhood.

We cook with them and send them home with warm healthy food. We share some laughs and pass on some basic skills, and hopefully, we create some of those good memories we all hope to carry with us through life.

It’s really the least we can do and I can’t think of anything else I’d rather be doing.

Recipe: Not So Fast Easy Red Lentil & Vegetable Soup

So it happened again (so many high fives)!

A group of folks got together to spend just under two hours with a group of kids from our fair city’s toughest neighborhood to cook together. To cook real food ~ food that needs no more than a few basic skills to make, skills like peeling, chopping, stirring, boiling, cutting, slicing, and best of all, caring.

There is nothing that could make me any happier, or more grateful to know that no matter where you find them, kids are always just kids. They need us. They need us to teach them how to live well, and that no matter what, they are worthy of every bit of our love and our attention. Each and every single one of them.

Just two nights ago we gathered in a small community center kitchen in Vancouver’s Eastside and cooked 4 healthy & nutritious dishes, one of them being this hearty, delicious soup.

We planned for 8, thought we had 6, and ended up with 12 (by the end of the night we had 9). Having such an immense amount of interest has been just incredibly encouraging, knowing kids are eager to learn how to have fun in the kitchen. And they are hungry for good food if it’s there.

This is the first of 3 classes we will be putting on, trying to reach as many youth & families as we can in the process. I’ll be posting the recipes from our classes one by one over the course of the next few weeks, starting with today’s soup, as we are repeating this menu for the next 2 classes coming up, and in the New Year we plan to offer another round with a new menu.

The Less:

Less complicated, fussy food means more pleasure in doing simple things. Less heavy, meat based soups and stews means more high-fiber, easy digesting. Less cost for good food means more to go around, so everyone can come and sit at the table.

The More:

More simple recipes means more confidence and fun in the kitchen. More warm filling soups means more warm, happy bellies. More skills where it matters means more focus on priorities, because eating well should be easy & accessible for all.

I thought I’d share what the recipes looked like for the class Tuesday night (spelling error and all). Part of our goal in arming kids with knowledge is providing tools when we can as well, so we sent each participant home with a folder full of recipes for each dish we made. It’s a little thing, but you just never know 🙂

I think my heart is so full it might last quite a while. And I can’t wait to do it all over again, surrounded by literally the best team of friends & volunteers any girl could wish for (so much love & gratitude for you all). Stay tuned for my next post and I’ll share the rest of what we all cooked, how we cooked it, and the laughs and smiles we had all along the way.

It’s that time of year again!

The time here in the cooling (and beautiful) Northwest when we start thinking about cozy sweaters, warm scarves, pulling on our favorite boots, and about Thanksgiving.

This is the time of year when every corner grocery store stocks tiny mini pumpkins and you can’t take a step without hearing a leaf (or seven) crumble under your well-meaning fuzzy-socked feet.

This week I am particularly thankful for big progress here at what I like to lovingly call world IPOM headquarters (tee hee).

Not So Fast is making progress at a healthy and (mostly) manageable pace. I owe big gratitude to all who are taking part in this creative and amazing labor of love. Your energy and support are the only reason NSF is anything more than just a random passing idea.

I’ve got a giant heart here and it’s all full because of all of you. Yes, you (that is pointed squarely at you too IPOM readers).

Not So Fast is hard at work planning a full school year of cooking classes for kids and families living in our fair city’s poorest neighborhood.

We want to not only share simple food with those who are keen to join us, but we hope to (maybe) offer (just a little) hope, confidence & much needed access to eating well into lives that are (likely) much more limited than our own.

A quick visit to our local farmers market drives our mission home for me with motivating intensity each and every time I go.

This time of year showcases producers of all types offering up the very height of glory in the fruits of their (hard) labor.

I get goosebumps just thinking of perusing & buying fresh corn, squash, kale, sweet cherry tomatoes, heirloom variety apples, and the last of the summer fruits and berries of all kinds.

It is nothing short of pure vegetable heaven this time of year, and every bit a true food lover’s paradise, no matter what your dietary preferences. You’d have to be inhuman not to get inspired this time of year after a visit to the market.

That is, unless you can’t afford it.

I wrote a few posts back about my visit to the market where I (oh heavens me) happened to find myself with only a meager sum of cash to get me through my visit. That visit where I had to control my desires and my will.

Imagine (just for a second) that you had to do that every day?

Not because (like me) you just weren’t organized, but because you simply didn’t have the dough. I ask this question not to instill guilt, or a sense of anything other than awareness.

Awareness that no matter what your means, there is always someone who has less than you, and always someone who has more.

Those blessings are sweetest that are won with prayer and worn with thanks.

As we prepare here in Canada to celebrate our national celebration of Thanksgiving (we are 3 weeks ahead of our American friends), many of us might be busy planning menus, inviting guests, or maybe just looking forward to our next three-day weekend.

My wish for this coming weekend, and for all the weekends to follow is simple:

My wish is that each day that comes next might be just as good as the day before, and that no matter what life throws at me, I always remember the important things. Like having a healthy loving family, a cozy roof over my head, and two strong legs to walk my sorry a** to the store when I’ve run out of milk (again).

Market Day in Provence: A Picture Journey

Alas it does seem a while since I posted, bonjour everyone!

Truth be told, it’s been somewhat challenging to blog from the road here, as time inside is limited and my mind is flooded with new sensations, views, ideas, and inspiration, none of which have solidified enough to properly put to words.

It is also (put more simply) that I am (and for the first time in a long time and maybe actually ever) in pure honest vacation mode, and my mind has turned off (mostly) everything.

All to make room for the new.

Here, in Provence (where we arrived Friday after a few glorious days in Burgundy), I was treated Sunday to my very first Provencal market experience, and what a treat that was!

The adorable and ancient village where we are based, called L’isle Sur La Sorgue, is somewhat popular for its markets, most notably antiques.

There is nothing either good or bad, but thinking makes it so.

Provence itself as a much larger area, (I just read in my French history book) has been celebrated since the Roman times for its particularly good fresh produce.

With the area being somewhat continually drenched in hot sun (it has been between 35 and 40 degrees steady since we arrived), one would think it obvious that this food would be good, and I had heard that indeed, it was.

But I was not prepared for this.

There are simply no words that could adequately describe the taste of the food that grows here, for this is (for any fruit and vegetable lover) a total mecca.

So in the absence of new recipes, I do hope you’ll enjoy a little tour of the town and the market with me here – as I’ve tried to do it justice, but I’ll let you be the judge 🙂

I am quite sure I read there were over 300 stalls at this market on Sunday, and judging by the fact that we couldn’t even see it all, I believe it.

This little village, with its narrow ancient streets, transformed into a bustling shopping zone with sellers & producers offering everything from soap, to clothing, records, antiques, jewellery, shoes, bags, scarves, spices, and of course food.

Oh, the glorious food.

Forget every stereotype you’ve ever heard about the French being anything less than polite. Here, they are warm, and excited to see visitors delight in their hard work. In fact, here in the south, the people are downright wonderful.

There are so many characters in a small village like this. And their food, their food.

It is truly sublime, not to mention very cheap (I’ll share more in my next post on just how inexpensive it really is).

In my next post I’ll tell you the top foods we’ve been enjoying here, especially since arriving here in Provence where we’ve got a full functioning kitchen, a barbeque, and an outdoor eating area to enjoy the food and the company under the open skies.

After Paris, and then a few days in hotel in Beaune, we are happy to be enjoying a lovely amount of space here, and are taking advantage of the fresh food & views available right around the corner.

We’ve got just a few more days here, so the likelihood that I’ll get another post out before the end of this trip is quite small, but you never know – I’ll have months of inspiration to share and enjoy from the perspective of life at home.

From here, we head south for a night to enjoy the ocean before returning to Paris for the last two nights – we head home Monday. I hope you all are enjoying the final weeks of summer, and I’ll look forward to catching up soon!

Picking Fruit Seaside and a Chilled Cherry Almond Smoothie

I am lucky to have grown up on the ocean, spending my youth just a few minutes from the peaceful rocky beaches of British Columbia. I still live near the ocean here in Vancouver, and admit I might find it tough to ever live away from it.

I am also lucky enough to live in one of the top cherry producing regions in the world. You know, those dark red fruits that grow up to the size of small plums and stain your hands and clothes as well as your palate, rendering it useless to enjoy any other fruit as much (at this time of the year).

Well you can imagine the sheer glee on our recent island weekend at the discovery (by me, my daughter, and my visiting younger sister) of cherry trees laden with ripe fruit growing seaside not far from our parents home.

There isn’t a much better way to cap off a leisurely afternoon of sunshine and swimming at the beach than taking a spontaneous detour down a country lane to find bushels of your favorite fruits – just hanging there amongst the shipwrecks and sun-laden stillness.

It was a perfect day if there ever was one.

My sister and I felt like kids again without a care in the world, except maybe being late to dinner at home as a result of our spontaneous excursion to the seaside orchard. Not far from when we were kids really, now that I think about it. And it felt good.

Today I’m excited to share those photos with you all as well as this simple and truly delicious recipe for a memorable summer drink. Another simple recipe requiring no more than 2 ingredients, this summer chiller really, truly, hits the spot.

Happiness is when what you think, what you say, and what you do are in harmony.

The Less:

Fewer ingredients to play with means each one stands to play its part. Less time to prep once you are ready means having it in hand in minutes. Less packaged, store-bought fruit drinks means less waste and cooked sugars, and more reasons to use what’s seasonally on hand.

The More:

More fresh fruit and whole ingredients means more easy simple nutrition. More fresh fiber and whole fats from soaked nuts means more natural fuel, protein, and roughage. More easy simple recipes means more ways to enjoy your favorites, and these two are a match made in seaside cherry heaven.

Chilled Cherry Almond Smoothie:

To pit cherries, use the ripest fruit you can. If you have a cherry pitter, go ahead and use it, but I never have and (like usual) prefer to use my own tools (my hands). If the fruit is ripe, simply tear the cherry open and remove the pits with your hands. If they are more on the firm side, you can open them with knife (like an apple) and remove the pit then.

If you have the almond milk handy, simple combine the milk and cherries in a blender and add the ice cubes. Blend on high until frothy. Serve as desired and enjoy! A simple, easy way to cool down and enjoy two healthful and delicious foods.

Summer is here and it’s a beautiful thing, my weekend at home was such a fabulous one, and much love to my folks and to my sister for the time together!

On another note, we are in the 10 day countdown until we leave for our trip to France for 3 whole weeks! I’ll be blogging from there as there will be just too much to keep up with, especially as we try to work our way through it all in true ‘less is more’ fashion.

Paris, Provence, Planning, and the Importance of Being Here Now.

Okay, so it’s true. All true!

We leave for our family trip to France in just over a month! After spending the entire year looking ahead, the time has now come to get serious.

This means list making, packing, planning, renting obscene numbers of subtitled french films, and generally totally freaking out. We have precisely 21 sleeps to prepare for, and our stay will begin and end in Paris, which is so far my favorite place in the entire world.

My first visit was just two years ago, a quick 4 days there alone with my husband on a whirlwind first jaunt across the pond for me (my hubby visits Europe on business often and lived 3 years in France in his early 20’s).

I knew it would change my life, but I didn’t yet know just how much.

One’s destination is never a place, but a new way of seeing things.

After a week in Paris, we’ll hit Beaune (in Burgundy wine country where the husband lived in the late 80’s) for a few days, and then cap off the holiday with a week in Provence (pinch me).

We are taking our two daughters, and at 14 and 8, they are not only excited, but also adding to the general feeling around here about, let’s say it again, generally totally freaking out. It’s a once in a lifetime trip for us as a family.

So how do we plan for a ‘less is more’ trip of this scale?

With all the thrill & excitement that comes from planning a huge trip like this, preparing for the sensory overload is key, and being realistic about how to handle it all is also just as key.

Here are a few things we’ll be doing to try to stay, and enjoy, each and every quality moment. I’d love to hear how you’d add to my list!

1. Pack light

Packing is a post in itself, and I may share more as we progress.

For now, we’ll begin the list making. As a family with at least one pro traveler (the husband), our philosophy on packing for air travel is simple. Light. Carry on if you can. For a trip of this length, we’ll be checking bags, but the goal is to bring only what we really need.

I’ll pack the usual leggings, a couple sweaters, a light rain jacket, one pair of jeans. A light summer dress or two, a bathing suit. Tank tops, shorts, lots of easy thin layers. Runners.

Plus, I need to leave room for (just a few) things I might acquire, right?

2. Eat in.

We’ve got apartments rented for both Paris and Provence, each for a week. This means market shopping!

This could be the thing I am most looking forward to, preparing salads and meals from simple market freshness, instead of relying on restaurants for all of our meals.

Dinner is always our highlight while on the road, and we plan to pick up breakfast and lunch snacks here and there as we crave them (honestly I could picnic on baguette and fresh fruit in the Luxembourg gardens everyday if I had my choice).

Simple, beautiful things excite me, and I cannot wait to live like a local in one of the most beautiful food countries in the world.

I just hope the purveyors at the market don’t mind my charming English.

3. Take cash.

It’s no secret that I adore nice things, I am sure there are more than a few of you who are with me on that!

On my last trip to Paris, I didn’t shop all that much. Part of it was being overwhelmed. Another part of it was being with my husband (mine has about a 5 minute life span inside a women’s boutique). Another part of it was I waited until Sunday (for anyone who has been you know what I am talking about).

I left with a second-hand top and a trove of gorgeous memories. I’ve got zero complaints.

But this time, I am planning to treat myself to a few special things while I am there (insert justification here). To avoid over spending, I’ve been saving. I’m taking my spending money in cash. No secret credit cards. No regrets. Just fun.

4. The ‘one per day’ rule.

While not a big rule person, it is important when planning to not overwhelm the travelers. When planning, we’ve got a rule that we will focus each day on one major sight see, particularly in Paris. There is nothing worse than over planning and running out of time to see and do all the things you wanted ‘to check off’.

Want to feel like a failure? Over plan. I’m not competing with the clock am I?

After all, I don’t recall seeing the French rushing around trying to catch everything all at once. On my last trip, I noticed quite a few local folk with plenty of time to chill on a terrace, enjoy the company of friends, and enjoy a moment (or two) to relax.

So if we miss a line up at a museum and instead opt for a stroll through the Marais with an ice cream in hand, you won’t hear me complaining. I don’t think the kids will mind too much either 🙂

5. Be here now.

Perhaps the single most important rule of all.

Planning such a big trip means spending a lot of money, and it is tempting to try to cram in too much. After all, you’ve got to get your money’s worth right?

As with anything in life, I try to see the beauty of the moment that is in front of me, and I want to teach my children to do the same. I know that the rooftop view from our apartment in Provence is likely to be one of the most beautiful things I could ever enjoy. I know there is a clean river to swim in nearby. I know there are markets and a whole town to explore.

My first ever meal in Paris. The Salad Nicoise. Veggie of course. And the waiter could not have been nicer!

This is where I’ll be instead of jumping in a hot car to drive to some other (equally spectacular) place. I don’t want to miss out on the moments and what is right in front of me, because I am seeking the ‘next big thing’.

So no matter where we are, that is where we will be.

Whether we are on the road to our next destination, or in the kitchen preparing a feast from our trip to the markets that day, that is where I will be.

With that, I’ve officially begun the countdown. It’s the start of summer, and the beginning of a truly special one.

I am overjoyed to share this experience with my family, and as I said earlier, a very special treat for all of us, as kids grow up. It’s not for forever these years, and they are both the perfect age.

My first visit to the Luxembourg inspired the digging up of my front lawn upon my return. Yes, I had gravel installed. The only thing missing is the guards.

On Road Tripping and (just a little) Time to Breathe.

Holla friends and bloggers! It’s so great to be baaaack!

I hope you all enjoyed a wonderful few days over the weekend! As for us, we took a few extra days to enjoy the Canadian holiday that just passed and celebrated with the first road trip of the summer season.

We love to road trip!

Ah, open space, open roads, and open minds.

Road trips are not for everyone, and I know a few people who simply don’t enjoy time cooped up in a car for hours on end. With that, I thought I’d share a few of my favorite ‘more’ ways to make road travel (just a little) ‘less’ stressful, and maybe (just a little) more enjoyable.

Of course, if you are a lover of the open road like we are, I’d love to hear your tips!

Here are a few of our faves…

Eat breakfast. Eat it before you go, or pack it and take it with you.

Just as you wouldn’t set off for the highway without a full tank of gas, its important to start the trip with a good full tummy!

So whether it’s a bowl of oatmeal, a piece of toast, or a yummy green smoothie (my next post), enjoy it before you head off.

Or, simply throw your smoothie into a clean mason jar and you are good to go for whenever you do get hungry!

Pack plenty of food. The key to a good time is always good food, and the car is no exception!

Easy to eat and clean up healthy snacks are best – and are always appreciated as well!

Our faves are lots of raw veggies, PB&J sandwiches, bagels, jujubes, and easy fruits like apples and oranges.

Nothing feels as good as being prepared, and I love pulling the good stuff out of the bag and smiling while they chow down 🙂

Take lots of fresh water. Staying well hydrated anytime is key, and especially on the road (even if it does mean more annoying pee breaks).

Keeping hydrated ensures you arrive at your destination fresh and ready, instead of dry and wilted.

Water helps with alertness too (for the driver). So pack lots of the cold stuff just to be safe, and pee breaks are always a nice excuse to hit another view-point!

Cover your bases. Before leaving for the road, make sure you’ve got enough supplies to keep everyone happy….toilet paper, paper towel, tea towels for extra spills, plastic bags, hand sanitizer, gravol, and pillows & blankets for those who might sleep in the back…..or the front….always me on the way home!

Remember to love the driver. I made a rule years ago to honor the driver that got me somewhere. It’s super corny, but I know my driving hubby likes a little of that love, and I like to give it.

The open road can be harsh, and driving is stressful. I try to remember the driver, to thank them, and to take care of them. So whether it’s a little neck massage, an arm scratch, a well-timed Altoid, or even just a genuine ‘thank you’ – a little goes a long way, even if it is just a little gesture.

I wonder if she is practicing mindful breathing?

Take the opportunity to breathe (or not). Anyone tried mindful breathing on the road? It’s a great time to focus on breath and calm the self for the long road ahead. Just a few deep breaths to start the trip and you might relax (just a little) more.

With all the promise of a few days away, comes an unknown that brings us joy and maybe (just a little) hope. Hope that we’ll see and do things that will bring us joy.

On Mindfulness & Thoughts like Popcorn

Does anyone love popcorn as much as I do?

Ever tried to meditate?

As in, sitting quietly, breathing mindfully (no where to go, nothing to do), clearing your mind of your thoughts? It’s a giant challenge, and one I don’t do often enough for sure.

Now imagine in that harried moment a boisterous loud popcorn popper, bubbling over with abundant, freshly popped (thoughts) and corn. Many of you might relate to this as we try to slow the pace of our minds, and the thoughts that keep ‘popping’ faster as we try harder to slow them down.

Eventually, if you sit long enough, those popcorn thoughts will slow down. Eventually, with practice, they do stop.

I don’t think I know a soul in this life who doesn’t benefit from taking some time to slow down, to breathe, and to simply be.

With that, I dedicate today’s post to popcorn, and to mindfulness.

Quiet. Peaceful. Present.

Pardon me for the (perhaps even slightly corny, okay, alot!) metaphoric post, but I couldn’t help it!

Popcorn is a long time personal favorite and I think it can help anyone wanting to practice mindfulness in a few small ways.

First of all, if you are an avid snacker, then it is likely you already know the virtues of being the proud and shrewd owner of a popcorn popper.

Last I checked, you can pick one up for about $20. Popcorn poppers don’t break, or require any cleaning, or take up any space (really) either.

They produce fresh, warm, and good-for-you popcorn in minutes.

Popcorn is literally the cheapest snack on earth – last I checked in it clocked at less than a quarter or so per large batch (to satisfy 2-3 people), and it also happens to be the healthiest, too.

So, if you love snacking, chances are you love popcorn (though I have met those who detest it).

Fresh popped is far superior to anything microwaved (in taste, economic, waste, and health factor), and also gives fried, salted, and over-processed snacks like bagged and boxed chips a serious run for their money.

So, if you don’t have a popper yet, they can be found easily at a bigger drug store, or cookshop.

I buy large bags of popcorn at a time a store it in a jar for easy access and scooping. My girls adore it, and so do I.

Many a meal has been made of popcorn, carrot sticks, and re-run marathons of Friends. Precisely why we *sometimes* look forward to the husband’s business trips.

But we don’t tell him that. We wouldn’t want to upset anyone now, would we?! 😉

The Less:

Less salted, fried, and packaged snacks, means less salt, oil, fat and empty, fattening foods in your life. Less worry about snacking means more enjoyment of those moments, and less guilt later about cravings, snacking, and eating in general. Less cost and less prep means snacking well is super easy, just breathe deep while it pops, and remember to stay present (or not).

The More:

More clean eating snack food means worry is banished. More tasty clean toppings means fresh flavor is abundant. More fresh homemade snack foods means the grocery snack aisles are history, and more high fiber popcorn means 100% satisfaction guaranteed.

Homemade Popcorn:

  • (1) electric Popcorn Popper
  • (1) scoop popcorn kernels (organic if possible)
  • (3-4) tbsp olive oil (feel free to also use melted butter)
  • sea salt to taste
  • other toppings to taste: nutritional yeast, chile powder, chile flakes, seasoning salt, black pepper, tamari, garlic powder…what are your faves?

Start by plugging in the popper and heating it for a minute or so to get it ready. Get a large clean bowl ready. Add the popcorn kernels, breathe deeply….exhale. Breathe deeply again……..exhale. Repeat until the popcorn starts popping! Add the oil in small bits as the popcorn comes out (yes, it is very interactive) – this will ensure even coating of all the kernels as best as you can.

Add your salt and seasonings as you add the oil. Once the thoughts, er, popcorn, are done cascading from the mouth of the popper, unplug and take one last mindful deep breath (or not).

Mix all with your hands. Choose your favorite show or movie, and enjoy!

Of course, if you don’t eat a lot of salt, or oil, or butter, you can eat popcorn completely naked too. It’s still delicious.

You can use one or all of these.

Sea salt,  nutritional yeast, olive oil.

You can also try these: chili flakes, garlic powder, and seasoned salts of all kinds.

Another one of my favorite bloggers also tipped me off to one of her favorite childhood snacks a while back. I’ve yet to try this (mostly because I think it will be just too good), but she grew up enjoying cubes of sharp cheddar cheese cubes in her popcorn – thanks to Sharyn at thekalechronicles for that tip – one of these days I am surely trying that as the kids will love it, that I am sure!

Enjoy popcorn well, and revel in the simplicity of such an easy and economical way to scratch the snack itch.

After all that mindful deep breathing (or not), make sure to check in that you are not mindlessly scarfing the fruits of your labor. I think popcorn has an ever so valuable added layer of benefit for us – to make sure we are staying in the present moment long after the popper stops and we sit down eat it.

Recipe: Chewy Chocolate Granola Bars

I hope everyone had a wonderful holiday weekend – filled with family, good food, and (maybe) (just a little) sunshine!

We enjoyed a few days together and certainly made the most of it: by cleaning out the basement!

Well, not the whole weekend was spent this way, but a needed spring-clean was a feel good way to ring in the season of newness, and clean out some cobwebs (literally!)

It felt pretty good, and it’s a gift that keeps on giving.

A few weeks ago, a reader wrote me asking if I had any recipes for kid’s lunches that are yummy, portable, and nut-free.

I admit I’m a little guilty of throwing a fruit snack or a little piece of chocolate (even a very occasional Oreo) into my kids lunches, as I’ve got at least one very picky eater in my house – the home baked goodies aren’t a guarantee that is for sure!

I’m not a big cookie-maker (or baker in general) – but I do like a good challenge…so I set out to make a treat that was flour-free, kid-approved, and still easy to make and (just a little) healthy.

I’ll let you guys tell me how I did!

The Less:

Less flour-based sweet treats means more in tact nutrition, and less reliance on gluten. Less packaged cookies and treats means less waste, less additives & preservatives, and more fresh gooey texture to boot. Less looking for ways to use whole grains means more inspiration that eating this way is easy. Less wondering means more confidence, and who doesn’t want that?

The More:

More chewy sweet ways to combine healthy ingredients means more ways to ‘trick’ loved ones who may not be keeners. More millet and oats means more super-powered fuel from clean sources. More homemade sweet goodness means more ways to the hearts of those you love, and who wouldn’t want that everyday?

This recipe incorporates millet, which is actually a highly nutritious seed that dates back to Biblical times. It’s totally gluten-free and high in protein, so if you are new to it – it’s worth checking out for sure! This recipe can easily be veganized too – and I know at least a few of you who are pros at that!

Chewy Chocolate Granola Bars:

  • (1/2) cup dry millet
  • (1.25) cups cold water
  • (1.5) cups quick oats
  • (1) cup shredded unsweetened coconut
  • (1/2) cup coconut milk (or nut milk or regular milk)
  • (1) tbsp butter (or coconut butter)
  • (1/4) cup brown sugar (or sucanat)
  • (2) tbsp cocoa powder
  • (1/4) tsp salt
  • (1) tsp vanilla
  • (1) tsp baking powder
  • (1) banana (fresh or frozen)
  • (1) fresh egg (or egg substitute)
  • (3/4-1) cup chocolate chips of choice (I used medium-sized dark for this, 1 cup will make them super sweet)

Start by combining the dry millet and the cold water in a small pot with the lid. Bring to a boil, and cook, covered on low heat for 20 minutes, until fluffy. Once done, remove from heat and fluff with a fork.

Oil a cookie sheet lightly with butter or oil and heat the oven to 350 degrees.

In a large mixing bowl, combine the cooked millet, oats, coconut, coconut milk, butter, sugar, cocoa powder, salt, and vanilla and mix well.

In a separate bowl, mash the banana and add to the mixture. If you are using a frozen banana, skip this step and instead simply soak the banana in hot water until it thaws and add it straight to the large bowl.

Add the egg or egg substitute and mix. Add baking powder and stir one more time before adding the chocolate chips.

Mix well one last time (don’t be afraid to get in there with your hands!).

Transfer to the oiled cookie sheet and press until you have a layer about 2/3 inch thick.

This recipe doesn’t make quite enough to cover an entire large cookie sheet so I butted it up the edge of one and lt it go from there trying to make the free end as straight as I could. I didn’t mind the jagged edge – the perfect tester piece before cutting the bars!

Bake for 30 minutes. Remove from the oven and let cool before cutting into bars either 3/3 inches or 4/4 inches square. Totally your call how you want to cut these! Keep in a tightly sealed container at room temperature and eat with 2-3 days.

Moist, chewy, and sweet – these are perfect for the chocolate lover’s post lunch treat! No wrappers or crumbs either.

Even if you’re on the right track, you’ll get run over if you just sit there.

I hinted a little in my last post about the grade 2 artwork that was on display (proudly I might add) in the hallway for all to see at my daughter’s school this week.

Each child was assigned a few questions, and their answers were posted with a photo of themselves and their proud, handwritten answers to (what I gathered) were questions like this:

  • What are you good at?
  • What do you like about yourself?
  • What hobby or sport do you do well?

I bet you all can relate to this one with me (just a little) – (or a lot).

Do you get tired when you run? I think everyone does. I wonder if this girl lets getting tired stop her from running.

With self-discipline most anything is possible.

I think blogging is a bit like grown up show and tell – where we can share our creations, our thoughts, and what we are excited about.

The beauty is we don’t really have to wait our turn like we did as kids.

Here are a few of my favorite things from this week.

It starts in my garden, where my magnolia tree finally decided to start blooming (it’s crazy late this year).

We are starting to plan this trip. Three whole weeks in France this August for the family.
