Raw veggies make me feel so good!
A day without laughter is a day wasted.
~ Charles Chaplin
Have you laughed today?!
I mean, really laughed? The side-splitting, joyful, exhaustion and tear inducing laughter that used to get us sent to the hallways in high school?
I love laughing. Laughter makes me happy. We try to laugh a lot. But sometimes I need to lighten up.
I’ve just returned from a (super) busy time of travel for work. Being on the road and working takes a tremendous amount of energy – and I am so grateful to have the weekend to catch up and return to my regular routine.
And to laugh!
The human race has only one really effective weapon and that is laughter.
~ Mark Twain
I don’t know about you, but I am a lot more prone to laughter when I am feeling spiffy.
Spiffy to me means my tummy is happy, my heart is happy, and my family and friends around me are happy.
To achieve all of these, I must take care of the 1st: making my tummy happy.
Because if my tummy is happy, my heart is happy knowing I am taking care of myself. When my heart is happy, it shines, and when it shines, it casts its light on anyone else around me.
And they are happy too.
You, yourself, as much as anybody in the entire universe, deserve your love and affection.
~ Buddha
Seem too simple? I’d love to hear what brings happiness and laughter your way, because (IMO) there is no such thing as too much laughter (except when it is in the middle of science class).
This salad is a flavorful explosion that will bring a smile to your face. Featuring beautiful raw kale, broccoli stalks, carrots, and the ever humble rutabega, I’ll be bringing this to many a summer patio this year!
Let’s dig in!
The Less:
Less lettuce means less more creative ways to use up vegetables. Less cooking means more raw nutrition. Less store-bought dressings and pre-grated veggies means less cost, preservatives, and packaging. Less conventional foods means more adventurous meals, and maybe a few laughs along the way too!
The More:
More cheap vegetables means filling up for pennies. More vibrant raw veggies means more vibrant raw smiles. More kale and broccoli means more super-powered greens, and more savvy delicious potluck salads means you’ll always get an invite!
Kale Veggie Slaw with Sesame Miso Dressing
- (1) cups grated carrots (about 2 medium)
- (1) cup grated broccoli stalks (about 3)
- (1) cup grated rutabega or turnip (1/2 large)
- (3) cups green emerald kale, chopped fine
- (1/2) large red bell pepper
- (1/2 – 1) cup roasted cashews (whole or pieces)
Dressing:
- (3/4) cup canola oil
- (2) tbsp dark sesame oil
- (1/4) cup apple cider vinegar
- (1/4) cup white miso
- 3 tbsp fresh chopped ginger
- (1/2) cup water
Start by combining all dressing ingredients except for the water. With the water ready, blend on high and add the water to the blender in a slow steady stream, until the dressing is light and frothy.
Transfer to a clean jar. This recipe makes more than required for this salad and is amazing on rice or quinoa, or any fresh green salad!
It’s hands down a wonderful vegan dressing that is smooth, flavorful, and incredibly delicious!
If you have a food processor with a grating attachment, or a salad master grater, you can grate the vegetables this way. Otherwise a hand grater (on a medium grate, don’t do it on a super fine cheese grater) will do. Grate each vegetable into a mixing bowl one at a time. You can opt to peel the carrots or not, but I always do for salads like this as they tend to keep better this way.
Grate the carrots, rutabega, and broccoli stalk all to the same size and mix well.
I’d rather be able to face myself in the bathroom mirror than be rich and famous.
~ Ani DiFranco
To chop the kale, use a good chopping knife. Chop the washed kale leaves as you would fresh herbs, into half-inch pieces or so, and add to the bowl. Chop the red pepper to a medium dice and add to the mix. Feeling good yet?
Toast the cashews in 350 degree oven until brown (about 10 minutes) or in a dry skillet on the stove-top. If using pieces, add straight to the bowl, or coarsely chop whole ones before adding.
To dress, start by adding 2/3 cup of the dressing to the bowl and mixing all well. If you like, add more dressing to taste. Garnish with toasted sesame seeds or more roasted cashews and serve!
This salad keeps well for at least a day in the fridge. In fact, my daughter said it was even better the next day, so no one needs worry about leftovers here!
When the kids will eat kale, that’s always a good sign, and while one of them still won’t touch it, I am pretty happy to have the hubby and teenager enjoying it now 🙂
Always laugh when you can, it is cheap medicine.

Most of the shadows of this life are caused by standing in one’s own sunshine.
~Ralph Waldo Emerson
By being yourself, you put something wonderful in the world that was not there before.
~Edwin Elliot
So amazing with a few slices of ripe avocado.
Bliss in a bowl!
Laughter is the shortest distance between two people.
~ Victor Borge

This might be funny to you. Or not.
I hope wherever you are on this fine evening, you are in the company of loved ones (perhaps even enjoying a hearty laugh).
I am so looking forward to catching up on life this weekend (this includes catching up with all my blogging buddies!).
After whipping up a batch of spicy spinach hummus and putting up some rice to cook, I am headed outside….I can hear the sounds of children’s laughter out there, and I think I might be missing out!
- What’s your most extreme laughing memory?
- Ever found yourself literally on the floor or (worse) kicked out of class?
I’ve always cherished the gems I carry with me and I’d love to hear yours! I hope you’ve all had a wonderful week! It’s so nice to be back 🙂
Yours in Less,
Shira! You’re back! Missed you this week, my blogging bud’. Do hope the trip was a success.
This is one salad I will be making. It looks absolutely divine, and you know how much I love kale. Just wish I’d picked some up at the market this morning, now. I’m guessing a rutabaga is a swede to us down here in the antipodes? (well, it’s what I’ll use, regardless.)
Have a super weekend. Cheers from Syders. 🙂
Hey J! Yes! At long last – it is so good to be home!! I missed you too! I totally thought I could manage it all and even took the laptop this time, but alas life on the road is no place for a blogger (at least this one!)…it was a great time though, truly!
A swede, never heard of that (cute name!) but it is a yellow turnip also? Anything sweet and rooty will do – even kohlrabi!
Hope you’ve been swell! I’ll be catching up on all my favorite blogs in the next day or so! xo! You too! 🙂
It looks delicious. You’re making me try new things – I’ve had miso soup, but haven’t cooked anything with it myself before. I’ll have a look for it in the grocery – I love making my own salad dressings.
I hope you can find it! I should have explained a little more about miso – there are many kinds to choose from! A health food store (if there is one close) is sure to have it – it’s wonderful to have and very healthy! 🙂
This looks so delicious Shira. I would order that in a second 🙂 hmmmm.. a raw food restaurant in the making? Excellent quotes – laughter is the cheapest medicine. The Edwin Elliot quote should be read by everyone. The last time I laughed so hard was with my hubby yesterday but it was late in the evening and I have no idea what we were laughing about. I do know that we were probably really delirious for that hour 🙂 have a wonderful weekend. It is always nice to get back o the routine!
I love that you best laughing memory is as recent as last night! Laughter is the best and the cheapest medicine for sure! I was shocked at how satisfying this salad was – I’ll have to consider that as a business venture perhaps 🙂 I hope you’ve had a great week! It IS good to be back!
Ohhh not sure it was my ‘best’ but it is as recent as I can remember 🙂 give me a few delicious slices of avocado, and that’s already half way to a wonderful salad. PS great photos
Best or not – I wish mine was that recent! Had lots of laughs but not the kind you get with your fave loved ones 🙂 Couldn’t agree more with you on the avocado – sometimes that’s as far as I get! Haha! Thanks you – I love getting photo comments from you – it means a lot!
🙂 🙂
Shira, a post to make my heart sing!!! To be honest I’ve been feeling a bit burnt out lately. I’ve been working so hard at school that when all the tests were over I was spent. Physically & emotionally. So this weekend I’m investing time in recharging my batteries. Which does of course start with good food and laughter. Thank you so much for this post…just what I needed to lift me up again 🙂
Oh thanks Sarah – I am soooo glad! When you work as hard as you do, it’s a must and the only way you can sustain your super woman efforts (I’ve hit the wall with all this traveling too!) – laughter is cheap and a true medicine! I so hope you have a wonderful weekend my friend! xo!
Oh my, that salad Shira!!! My laughing hour is always around 5 in the morning, working out at the gym with my friend Erika – somehow we always find something that makes us laugh until we are rolling on the floor. One morning some guy in front of kept doing workout moves bordering on pornographic. Just needed the chicka-bow-wow music! We kept busting a gut and couldn’t help but laugh right out loud until we cried. Good times.
Ha! That’s awesome Somer – you’ve got to love a good friend that makes you laugh! I can only imagine the ridiculousness of that gym outing :)!! Too funny!!
Yes, pelvic thrusts are meant to be done in private areas! Too funny!
Yes, is that ever a true statement!!
Somer, I am so impressed that you can be awake and working out at 5 a.m.! Let me just say that if I were awake at that hour I would certainly not be laughing, but more power to you! Glad to know there’s someone taking care of the laughing that needs to be done while I sleep. 🙂 And Shira, thank you! This is just the recipe I needed. I had a great kale salad last week with a sesame dressing that I hoped to replicate; yours will do quite nicely. 🙂 It also had farro and lentils, and when I make it I am going to steam the lentils like you do, so it will be inspired by you in many ways!
Emmy, that’s awesome!! I’d love to hear how it turns out!! 🙂 🙂
Isn’t Somer amazing? 5 am – I’d give anything to be a morning person like that! Bravo!
Just so you both know, I AM NOT a morning person. I have just found that if I don’t fit it in then, it usually doesn’t happen. And me without exercise is not a person you would want to be around 😉 it really helps that I have someone there to meet me who is also not a morning person. It’s like some sort of tortuous pact. We laugh often at that hour mostly because we are so delirious 😉
Got beets and jicama in my co-op basket today, I’m thinking a salad like yours is just what they are begging me to put them in!
Oh totally! Both of those veggies would be amazing Somer!
Still, the fact you can do it despite not being a morning person makes it even more impressive! It is inspiring and been on my to do list for many years getting up early…well done!
Thanks!
Major like! I’m pinning it!!
Sweeet! Lovely my friend! Xo!
Wonderful sounding slaw. I’m not a massive fan of miso, but if done properly it can be nice – I tend to deal with it on a case by case basis :D. It’s quite nice mixed with tahini. I suppose the dark sesame oil makes that sort of combination anyway. Yum, Shira! Laughing wise, I can’t really remember. There definitely are instances where I end up crying of laughter, but it’s not so common these days. I’m not more depressed by the way, don’t know why it is. I tends to happen more when I’m living with my girlfriend, but we’re apart for the moment. That might be why.
Thanks Nick! Miso is nice if done right I agree! I grew up with it and find the taste takes me home 🙂
It’s funny about the laughter too – I can’t recall the last time I was on the floor, but it was likely with my older daughter…we act pretty silly and you just never know what might set it off! Hope you guys get some good laughs in when you see each other – I always admire folks that can live apart! 🙂 So who gets to eat all that incredible food you create with you? 😉
We’re seeing each other for a week starting this Tuesday, can’t wait! My parents get to eat it – I’m living at home because I’m saving money so I can do my masters next year (I’m only 21 so it’s acceptable to have moved back home :D)
Yes, makes total sense! I only HOPE my girls will still be living with me at that age (I just can’t bear the thought that they will one day leave me!) – your folks (and your GF) are so lucky to have you and your mad kitchen skills my friend! Enjoy your visit together!!
Looks fantastic Shira! I really like that you used the stalks of the broccoli- they are far too often wasted!
No matter how lovely a trip is, it’s always nice to be home isn’t it? Hope you had a wonderful time in Toronto and that you were able to find some delicious foods as well 🙂
Thanks Gabby! TO was fun, but so crazy busy I am loving a Saturday morning at home :)! Had a blast though…it’s a pretty good vibe city these days, much different from the city I remember visiting even 5-10 years ago – and a super indy coffee scene going on too! Hope you had a great week girl! xo!
I’m glad your trip was so nice! I love the local coffee scene there- they even have a card that you can get stamped for visiting all the local places- can’t wait to get my own 🙂
You as well Shira! Get some well-deserved rest! xox
Really bliss in a bowl!
Love the shot of the raw egg, oil and other things placed on the wooden chopping board. Also the way thy are set in the bowl in a colour co-ordinated manner. Shira always look forward to your posts:)
Thanks Ishita! I think it could only be enhanced when set aside that gorgeous beet salad you posted – that would be a stunning combo, wouldn’t it? Love your visits too 🙂 Always!
i always enjoy your thoughts and recipes! 🙂 thanks for sharing, shira!
Thank you my fine friend! I always adore your kind comments too! xo! 🙂
I just got a veggie spiralizer and am looking for any excuse to go crazy w/ the raw veggies – – thanks for adding a recipe to the list!! Looks super-duper delicious! Laughing…guaranteed crying laughing when I’m with my friend Kristen. It can happen any time. We once had tears rolling down our faces, unable to form coherent sentences, looking at teeny-tiny moccasins for babies. I mean, wha?!
Perfect timing for you! I hope you like this one – it’s so good!
Aren’t silly girlfriends the best? I’ve a few of those too….and the ridiculous things that set us off, hey?! Love this one!
I am definitely going to give this a try! We are probably getting kale from our organic farmer friend. I don’t know much about kale and am learning how to use it – thanks for this idea! 🙂
I hope you like it! It kind of hides the strong taste of raw kale that most find a little tough to enjoy at first 🙂 It’s a goodie that will make a kale lover out of anyone (I think!) 🙂 Thanks for stopping in!!
So great–I sometimes deny myself the love and grace I would give to others. And so true–when my body is happy, I’m usually happy. When I’m not happy, I don’t always treat my body well. It can be a vicious cycle, but thanks for a great reminder.
My most sincere pleasure! It’s my biggest rule for life (that is so hard to forget when you are caught up in that vicious cycle)! Take care of number 1 and everything else falls into place! xo – thanks for stopping by – this was a great comment! 🙂 Happy Saturday!
I agree, you can never laugh too much! My favorite laugh sessions when I was younger were the ones where you had to be quiet, yet were laughing. This made me laugh even harder having to hold my nose or breath to try and control my laughter. I have been kicked out of class many times (not anytime recently) for laughing and causing a disruption!
This salad looks wonderful. Perfect for a summer evening.
Hilarious Britt! The hardest thing to do is NOT to laugh when you are supposed to be quiet!! Thanks! 🙂

This recipe with kale and miso dressing sounds yummy. I will have to try it. I do love miso. Thanks for the like to my kale stir-fry!
My pleasure – it looks delicious! Thanks for stopping by! 🙂

Hi Amy! I hope you get better quickly so you can get back to eating all these healthy and yummy (crunchy) foods! I work for a coffee roaster here in Vancouver and travel to see clients as I run the Wholesale division – it’s not a bad life visiting restaurants and coffee shops all day! Hope you are enjoying the weekend! xo!
sounds absolutely amazing!!! another reason why we’re friends! haha! coffeee!!!! 😛 i’m so excited to be back in Vancouver! june is so close, yet so far away! haha. happy sunday!
You’ll get so many great chances to drink the best here – check us out at jjbeancoffee.com – a must while you are here!! What dates are you visiting?

For sure! Just drop me a line – I am here that week! 🙂
😀 cool beans!
Cool BEANS! Coffee, beans, too funny!
Ooh, thank you times a million! I’ll definitely have to try this. This looks so amazing. I hope you had a great trip and are enjoying plenty of laughter and relaxing this weekend. On laughter — in college once I had a psychology professor that insisted that laughing (even forced, fake laughter) had significant (positive) impacts on stress, health, focus, etc. So we began each class faking laughter for a full five minutes. It always turned into real laughter, and it really did help!
Thanks Becca! That’s an amazing laughter story – only in psychology class! I wish I was part of that, it sounds pretty fun! We’re enjoying the sun and a lot of laughs..thankfully our family is pre-disposed and we tend to laugh at everything, so it’s good! Hope you are too! xo 🙂
I love recipes that utilize nutrition packed kale! And I definetely won’t forgot to top off the salad with avocado 🙂 as for my laughter memory… I remember I was in Paris and my best friend and I burst out laughing and a stuck up French couple walked by us and scoffed–which made us laugh even more , haha!
Ha! All the best moments are usually with close girlfriends, hey?! Too funny! Loving your commitment to avocado too Frances, as it would be a wee bit of a crime to forget that part! 🙂 🙂 Have a fine weekend girl! xo!
I just came upon your blog and left this up on the computer while attending to a toddler vs pre-schooler toy fight. Hubby walked by, saw it and shouted, “WHY HASN’T THIS BEEN ON THE DINNER TABLE BEFORE?!!” He sat down and read the whole thing calling out all the “best parts”. So glad to have found your blog!!
What an awesome story – thank you for sharing that with me! Tell your husband too I am beyond thrilled that he read it too! You just made my weekend – I hope you get to treat him to the salad now (hehe!) – and hoping he loves it!! 🙂 Thanks for this!
I want to eat this right now!
🙂
Me too! I make it and if goes too fast – as soon as its gone I want more! Happy Sunday (almost Monday!) 🙂
Bliss in a bowl… enough said 🙂 With tks, supposed to be eating dinner right now, and yours would fit the bill perfectly 😀
Thanks Deb! I feel totally dumb asking this – what is tks? It is really bliss in a bowl for sure…I had a version tonight after my run. Excellence!
Oh, I’m a dork… I just meant tinykitchenstories- she’d left a comment just before mine 😉 That was confusing- sorry 😀 But I’ve gotten my laugh for the morning 😉
Ah! I knew it was something I was totally missing….too funny! I just had to ask!! Me too! 😉
Ahhh!!!I just bought a HUGE bunch of kale from the farmers market yesterday!!! I needed something to do with it. Thanks for sharing this recipe!
That’s awesome!!!! I hope you like it – it’s so good! 🙂 xo!
I bought kale today in anticipation of this recipe that you promised 😉 I’ve actually been craving a soba noodle bowl with a sesame miso dressing so this might hold me off until I can make that! I’ll keep you posted as to how it goes (i.e. my first kale recipe experience).
The best memories I have of laughing are with my husband – especially when we’ve been doing the daily grind and then we have a moment when we find something so hysterical. You realize how good it feels to just do that after a long day. And the laughing I love most is the one that brings me to tears and when I’m gasping for air…and when it takes a while to stop 😀
Awesome laughing thoughts and story and so true – aren’t those moments just the best?!
I am thrilled you were prepared for this recipe and I hope you enjoy it – let us know how it goes and whether you might be a kale convert! 🙂 I can’t wait to hear! Thanks!
I just posted about this amazing recipe! I suspect you won’t care much for the first half of the post but bear with me….veggies prevail!
I love this – I love anything this authentic and amazing (I admire peeps who follow their hearts and whims like this – all in moderation I say!)! And your photos of the salad are gorgeous! Makes me smile 🙂 Thanks girl! xo!
oh yum. This is right up my alley.
Thanks for another wonderful kale recipe!
My pleasure! Thanks for stopping by! It’s a goodie 🙂 🙂 !!

Shira!
I made this (a slight variation) with dinner tonight. AMAZING. In fact, I’m still stuffing my face with it for dessert! Ha! Anyway, I couldn’t wait to tell you how much i loved it….thank you for posting! Hope you are well. 🙂
Hi Becca! I am thrilled to hear it! What a way to return home 🙂 I am back after 5 days away and just opened my computer to this message..I would love to hear your variation! I just served it last night to our long weekend crew (7 meat eaters and me!) and subbed the broccoli stalks for farmer’s market green baby bok choy, would love to hear about yours! That is super – thanks for letting us know, and I hope you are well too! Oh, and enjoy dessert…I might go sneak a few bites of my leftovers too.. 😉 xo!
Oh, I didn’t change much, just some substitutions based on what I had on hand. For the veggies, I used kale, broccoli, cauliflower, green cabbage, and red cabbage. Vow Choy sounds great too! I sprinkled some sesame seeds instead of cashews and increased the amount of toasted sesame oil in the dressing. It was just amazing. So I had to rush over to the computer and tell you how much i enjoyed it. 🙂 Welcome back! I’ll head over now to read about your trip!
So awesome Becca! It sounds amazing….it’s really about the dressing which is really killer 🙂 So happy you enjoyed it!!
You’re right — that dressing will make anything amazing. It’s totally going to be a regular in my fridge from now on. Thanks again! Also, I nominated you for a Food Stories Blog Award: http://foodstoriesblog.com/food-stories-award/ 🙂 I’m loving your blog!
Thanks Becca!! You are too too sweet! Congrats on your award and the feeling is so mutual! xo! 🙂
*Bok Choy is what I meant, below….good old autocorrect 😉
Yummmm, this looks so good! I love kale, and you can’t go wrong with ginger, sesame, and miso.
Thanks Allison!
Oh my god, I feel so inspired right now. I never knew ‘coleslaw’ could look so fantastic and sound so great. Btw, that dressing is prop gonna be a favorite of mine from know on 🙂 LOVE IT!
Thanks! Enjoy! 🙂
I’ve read that canola oil is very unhealthy for you. What do you think? Would olive oil be just as good?
I use organic and unrefined, non GMO canola, but olive oil is just as good! Feel free to substitute! Thanks for stopping by!
I just stumbled upon your beautiful, healthy web site and love it! Your fresh, natural ingredients are inspiring. I’m sensing a macrobiotic influence?
My biggest laughs are always with my sister. I remember sitting next to her in Mass as children having a big case of the giggles–mom wasn’t too happy. It’s still makes me smile today.
Wonderful laughing stories! Aren’t they precious?! Awesome!
Very perceptive – as I don’t subscribe to any one ‘way’ to eat, but of all the influences, I do love the gentle simple way of macrobiotic philosophy. Thanks for stopping in and for the comment! 🙂 so happy to have you!
Just made this for my little dinner party tonight! Added some radish and some cilantro (I can’t help add cilantro to just about everything) so we’ll see how it goes!
Also, I wanted to add how pleased I was to see your blog on the WordPress eblast last week with this very recipe! I hope you received a flood of hits and your popularity soars. You deserve it! 🙂
Wow – thanks so much Jennifer! That just totally made my day! I was so surprised to see that article, it was crazy, and really such a crazy cool honor!
I am thrilled you made this salad! I made it it for a dinner party just last weekend for a meat eating bunch of athletes – it was well received and I would love to hear how it goes! Cilantro always adds ‘amazing’ to anything and I hope your guests love it tonight! Cheers! Oh, and Happy Memorial Day weekend, we just had our long weekend last week! 🙂
My guests loved it, but I think there could have been a little more kale and cilantro–I didn’t get the proportions right. But that’s my preference! And happily I have lots of dressing left over!
🙂
Sounds amazing – so happy it was enjoyed! I love the dressing on anything…..good to hear you had some leftover!! 🙂 Have a great week!
Inspiring recipee :D. I’ll try it 🙂
Thanks Paula! 😉
This is the type of salad I dream about!! Thanks for sharing!
Thanks Rhonda! Me too – so happy to share .. and know I am not the only one dreaming of salad! 😉
Oh my I must try this. You inspire me to turn my life and health around again. You don’t have a book, do you :)?
Wow – that is quite the compliment – thank you! I don’t yet have a book (but am working towards it), just this blog for now. I hope you’ll check back to see what is new – and this salad is dynamite! I hope you try it 🙂 Let us know!
This is the first post I have had the privelage of reading and I have to say I ❤ you! Thanks for sharing!
So happy to have you! Welcome to IPOM! 🙂
