I mean, really laughed? The side-splitting, joyful, exhaustion and tear inducing laughter that used to get us sent to the hallways in high school?
I love laughing. Laughter makes me happy. We try to laugh a lot. But sometimes I need to lighten up.
I’ve just returned from a (super) busy time of travel for work. Being on the road and working takes a tremendous amount of energy – and I am so grateful to have the weekend to catch up and return to my regular routine.
And to laugh!

I don’t know about you, but I am a lot more prone to laughter when I am feeling spiffy.
Spiffy to me means my tummy is happy, my heart is happy, and my family and friends around me are happy.
To achieve all of these, I must take care of the 1st: making my tummy happy.
Because if my tummy is happy, my heart is happy knowing I am taking care of myself. When my heart is happy, it shines, and when it shines, it casts its light on anyone else around me.
And they are happy too.
You, yourself, as much as anybody in the entire universe, deserve your love and affection.
Seem too simple? I’d love to hear what brings happiness and laughter your way, because (IMO) there is no such thing as too much laughter (except when it is in the middle of science class).
This salad is a flavorful explosion that will bring a smile to your face. Featuring beautiful raw kale, broccoli stalks, carrots, and the ever humble rutabega, I’ll be bringing this to many a summer patio this year!
Let’s dig in!
Less lettuce means less more creative ways to use up vegetables. Less cooking means more raw nutrition. Less store-bought dressings and pre-grated veggies means less cost, preservatives, and packaging. Less conventional foods means more adventurous meals, and maybe a few laughs along the way too!
More cheap vegetables means filling up for pennies. More vibrant raw veggies means more vibrant raw smiles. More kale and broccoli means more super-powered greens, and more savvy delicious potluck salads means you’ll always get an invite!
Kale Veggie Slaw with Sesame Miso Dressing
- (1) cups grated carrots (about 2 medium)
- (1) cup grated broccoli stalks (about 3)
- (1) cup grated rutabega or turnip (1/2 large)
- (3) cups green emerald kale, chopped fine
- (1/2) large red bell pepper
- (1/2 – 1) cup roasted cashews (whole or pieces)
- (3/4) cup canola oil
- (2) tbsp dark sesame oil
- (1/4) cup apple cider vinegar
- (1/4) cup white miso
- 3 tbsp fresh chopped ginger
- (1/2) cup water
Start by combining all dressing ingredients except for the water. With the water ready, blend on high and add the water to the blender in a slow steady stream, until the dressing is light and frothy.
Transfer to a clean jar. This recipe makes more than required for this salad and is amazing on rice or quinoa, or any fresh green salad!
It’s hands down a wonderful vegan dressing that is smooth, flavorful, and incredibly delicious!
If you have a food processor with a grating attachment, or a salad master grater, you can grate the vegetables this way. Otherwise a hand grater (on a medium grate, don’t do it on a super fine cheese grater) will do. Grate each vegetable into a mixing bowl one at a time. You can opt to peel the carrots or not, but I always do for salads like this as they tend to keep better this way.
Grate the carrots, rutabega, and broccoli stalk all to the same size and mix well.

To chop the kale, use a good chopping knife. Chop the washed kale leaves as you would fresh herbs, into half-inch pieces or so, and add to the bowl. Chop the red pepper to a medium dice and add to the mix. Feeling good yet?
Toast the cashews in 350 degree oven until brown (about 10 minutes) or in a dry skillet on the stove-top. If using pieces, add straight to the bowl, or coarsely chop whole ones before adding.
To dress, start by adding 2/3 cup of the dressing to the bowl and mixing all well. If you like, add more dressing to taste. Garnish with toasted sesame seeds or more roasted cashews and serve!
This salad keeps well for at least a day in the fridge. In fact, my daughter said it was even better the next day, so no one needs worry about leftovers here!
When the kids will eat kale, that’s always a good sign, and while one of them still won’t touch it, I am pretty happy to have the hubby and teenager enjoying it now 🙂

It looks delicious. You’re making me try new things – I’ve had miso soup, but haven’t cooked anything with it myself before. I’ll have a look for it in the grocery – I love making my own salad dressings.
I hope you can find it! I should have explained a little more about miso – there are many kinds to choose from! A health food store (if there is one close) is sure to have it – it’s wonderful to have and very healthy! 🙂

Shira, a post to make my heart sing!!! To be honest I’ve been feeling a bit burnt out lately. I’ve been working so hard at school that when all the tests were over I was spent. Physically & emotionally. So this weekend I’m investing time in recharging my batteries. Which does of course start with good food and laughter. Oh my, that salad Shira!!! My laughing hour is always around 5 in the morning, working out at the gym with my friend Erika – somehow we always find something that makes us laugh until we are rolling on the floor. One morning some guy in front of kept doing workout moves bordering on pornographic. Just needed the chicka-bow-wow music! We kept busting a gut and couldn’t help but laugh right out loud until we cried. Good times.

I had a great kale salad last week with a sesame dressing that I hoped to replicate; yours will do quite nicely. 🙂 It also had farro and lentils, and when I make it I am going to steam the lentils like you do, so it will be inspired by you in many ways!

Just so you both know, I AM NOT a morning person. I have just found that if I don’t fit it in then, it usually doesn’t happen. And me without exercise is not a person you would want to be around 😉 it really helps that I have someone there to meet me who is also not a morning person. It’s like some sort of tortuous pact. We laugh often at that hour mostly because we are so delirious 😉
Got beets and jicama in my co-op basket today, I’m thinking a salad like yours is just what they are begging me to put them in!

Wonderful sounding slaw. I’m not a massive fan of miso, but if done properly it can be nice – I tend to deal with it on a case by case basis :D. It’s quite nice mixed with tahini. I suppose the dark sesame oil makes that sort of combination anyway. Yum, Shira! Laughing wise, I can’t really remember. There definitely are instances where I end up crying of laughter, but it’s not so common these days. I’m not more depressed by the way, don’t know why it is. I tends to happen more when I’m living with my girlfriend, but we’re apart for the moment. That might be why.

It’s funny about the laughter too – I can’t recall the last time I was on the floor, but it was likely with my older daughter…we act pretty silly and you just never know what might set it off! Hope you guys get some good laughs in when you see each other – I always admire folks that can live apart! 🙂 So who gets to eat all that incredible food you create with you? 😉
We’re seeing each other for a week starting this Tuesday, can’t wait! My parents get to eat it – I’m living at home because I’m saving money so I can do my masters next year (I’m only 21 so it’s acceptable to have moved back home :D)

I agree, you can never laugh too much! My favorite laugh sessions when I was younger were the ones where you had to be quiet, yet were laughing. This made me laugh even harder having to hold my nose or breath to try and control my laughter. I have been kicked out of class many times (not anytime recently) for laughing and causing a disruption!

Ooh, thank you times a million! I’ll definitely have to try this. This looks so amazing. I hope you had a great trip and are enjoying plenty of laughter and relaxing this weekend. On laughter — in college once I had a psychology professor that insisted that laughing (even forced, fake laughter) had significant (positive) impacts on stress, health, focus, etc. So we began each class faking laughter for a full five minutes. It always turned into real laughter, and it really did help!

I bought kale today in anticipation of this recipe that you promised 😉 I’ve actually been craving a soba noodle bowl with a sesame miso dressing so this might hold me off until I can make that! I’ll keep you posted as to how it goes (i.e. my first kale recipe experience).
The best memories I have of laughing are with my husband – especially when we’ve been doing the daily grind and then we have a moment when we find something so hysterical. You realize how good it feels to just do that after a long day. And the laughing I love most is the one that brings me to tears and when I’m gasping for air…and when it takes a while to stop 😀

Oh, I didn’t change much, just some substitutions based on what I had on hand. For the veggies, I used kale, broccoli, cauliflower, green cabbage, and red cabbage. Vow Choy sounds great too! I sprinkled some sesame seeds instead of cashews and increased the amount of toasted sesame oil in the dressing. It was just amazing. So I had to rush over to the computer and tell you how much i enjoyed it. 🙂 Welcome back! I’ll head over now to read about your trip!
